You cannot arbitrarily remove one of the Extents and each Extent is required! 
Find attached and empty Extent to replace the missing one so as to effect User Data Recovery, not necessaraly make it a viable working Virtual Machine.
Edit the "Windows 7.vmdk" to be as it should and use the attached file once unziped as a replacement.
