You cannot install the drivers for the Host's GPU in the Guest OS since the Guest OS does not directly see it. So if the OS can't see the device then installing drivers for a device the OS can't see would be a waste of time and in some cases the drivers wouldn't install anyway if it can detect the device! So one is stuck with the VMware provided Graphics Adapter. Now other things like the iSight camera that a different story and you can use the Boot Camp iSight Driver in a Virtual Machine.
