I just wanted to update the discussion and to thank Avanish321. Disabling 3D accelleration seems to have completely resolved the issue. I never brought it into the Apple store because I really don't need the 3D accelleration. I should add that the Win7x64 VM that this issue was occurring with is my primary work environment - I use it every day, 8-10 hrs per day. Not a single crash since disabling accelleration.
