You can certainly delete all the files, format your disk or drive your car against a wall. However, in each of these cases you'd loose data, and I definitely wouldn't recommend it.
The .vmdk files you see make up the 60GB virtual disk, so that's absolutely normal.
I attached a fixed .vmx file for you to replace the current one with VMware Fusion closed.
