Well according to that, its as simple as removing the share from the list. However I never had the desktop as part of the shared folders. I did initially when I first installed, It was a share for my entire macbook, the default you start with. But then removed the checkmark beside it and created a separate folder in Documents that I wanted to use as the share between windows and mac. So I added that and checked it instead while the other was removed.
So shouldn't the only connection between the mac and windows vm be that single shared folder?
One thing I did notice however is in Windows I have a shortbut on the desktop that says VMWare Shared Folder. Inside I can see the single shared folder I created, plus these folders - Desktop, Documents, Download, Movies, Music, Pictures.
