Turning off mirroring has worked in terms of being able to save files from the web browser and access the Windows Documents folder - thank you 
I did however like sharing the desktop and My Documents folder between my Mac and VM just for the simplicity of accessing files between the two. I will experiment further with the mirroring settings and registry and will update if I solve this.
